Allow me to introduce Miss thing….my raw vegan Mango Coconut Tart!!!
Try this super easy and super quick recipe. As if those 2 things aren’t enough, a couple of other things that I absolutely love about this recipe is that it is dairy-free, gluten- free, refined sugar-free and paleo…if that’s your thing.

Ingredients:
Crust
1 cup pecans (soaked and drained)
1 cup dates (pitted, soaked and drained)
1 pinch of salt
1 Tablespoon shredded coconut (optional)
Filling
1 cup dates (pitted, soaked and drained)
½ cup coconut oil
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
½-1 Tablespoon lemon juice
¼ teaspoon vanilla
Fruit
2 cups diced mango (can sub with peaches, pineapples or a combo off all 3)
Instructions:
Crust
Blend and press into a pie/tart pan
Refrigerate for 30 minutes
Filling
Blend well until creamy
Pour into bowl with diced mangos
Stir filling and diced mangos until all mangos are covered
Pour mango mixture over crust and refrigerate for 30 minutes.
Garnish with sliced strawberries, raspberries or blueberries.
